Asian Style Pork Steaks7/8/2016 Amelia update
Since I told you about my great-granddaughter Amelia’s terminal illness, I thought I would give you an update. Amelia receives two visits per week from hospice nurses and two per week from a hospice volunteer. She also receives medication for comfort and anxiety once every four hours, plus a smaller dose every hour if needed and one every six hours. This has helped make her breathing easier. She sleeps more, but is happier when she is awake. She still has that beautiful, sweet smile. Amelia’s condition seems fairly stable at the moment. For her parents and extended family who adore her, we are enjoying every precious moment we have with her! Summer is grilling time at our house. This is one of our favorite grill recipes. I hope that you enjoy it as much as we do. This is a large enough recipe for company, but you can cut the recipe in half. Asian Style Pork Steaks: 1 cup soy sauce 1 cup dry red wine (I have used the cooking wine that you can purchase at the grocery store) 1 cup lemon juice (can use real lemon) 1 medium onion, diced 2 Tbsp ginger root, grated 6 cloves garlic, minced 1 1/2 tsp black pepper 5-7 pork steaks Combine all ingredients. Place marinade and steaks in a large bowl or plastic bag and marinate in refrigerator 4-24 hours. Drain and grill to desired doneness. Hope that you had a great 4th of July and are enjoying the summer. Have a great week!
