Pa Lloyd was out of town all last week so Maggie and I were alone! Maggie is terrified of storms so we were in the basement when the storm hit. My neighbor Erin knocked on my back door to check on us. When I looked out my front porch windows I couldn’t see the yard. We have one large tree on our property and two large branches had broken off and covered my yard, broke a hand rail on the front steps, and bent the eve troughs along the porch roof. What a mess! On Friday afternoon when they were done with work my daughter Mary, Scott and two grandsons, Nik and Justin came to the rescue, with a chain saw and four hours of hard work the four of them had the mess cleaned up. I was so grateful for my family’s help! I ordered Jake’s pizza and had made a dessert that day, so at least they were fed. Here is the dessert recipe I made for them. My great granddaughter Lydia cried when her serving was gone!
Layered Chocolate Dessert: Crust: 1 stick butter, softened 1/2 cup powdered sugar 1 cup flour chopped pecans if desired. Mix all together and press in greased 9x13 inch pan, bake 20 minutes until golden at the edges, cool. First filling layer: 1- 8 oz. cream cheese, softened 1/2 cup powdered sugar 1 tsp. vanilla 1 1/2 cup cool whip Cream cream cheese, add powdered sugar and vanilla, mix well, fold in cool whip carefully spread over crust. Second filling: 1 small pkg. chocolate instant pudding mix 1 small pkg. vanilla instant pudding mix 3 cups whole or 2 % milk Whisk together until thick pour over and spread evenly on cream cheese layer, chill until firm, then top with 8 oz. cool whip. Chill until serving. You can use any flavor of pudding mix you like, chocolate is our favorite! Have a great week!
