Now that the holidays are nearly over it feels good to return to the basic comfort food cooking, to me anyway! Cold winter weather seems to call for comfort food too. When my son John was home for the holidays he asked me if I had shared my rice hamburger casserole recipe with you. He said it is a favorite of his family. I made it a lot when my children were home as did my mother when I was growing up. Everyone seems to enjoy it and to me it’s basic comfort food, I hope that your family will enjoy it too.
American Chow Mein
1 lb hamburger
1 medium onion, chopped
2 stalks celery, sliced
1/2 cup uncooked rice
4 Tablespoons soy sauce
1 can cream of mushroom soup
1 can cream of chicken soup
1 soup can of water
chow mein noodles to sprinkle on top
Brown hamburger, onion and celery, drain. Add rest of ingredients except chow mein noodles. Pour into a large greased casserole dish, sprinkle noodles on top. Bake at 350 degrees for 1 1/2 hours. When I want to fancy it up a bit for company, I add 1 small can of drained mushrooms and 1 can of drained water chestnuts and I add a few cashew nuts with the noodles for the topping.
